IGP - Balsamic Vinegar of Modena

 

Balsamic Vinegar of Modena IGP (PGI in English), considered one of the oldest products of Modenese cooking, is known and appreciated worldwide for its unique ability to blend well with every type of cuisine and enrich every kind of recipe, from starters to desserts, with its characteristic sweet and sour aroma.

Balsamic Vinegar of Modena IGP is obtained from a proportioned blend of selected wine vinegars and grape musts. It is stored in barrels of different sizes made of different types of wood, which lend the product its typical flavour and fragrance.

The length of aging inside the barrels determines the two categories into which Il Mallo Balsamic Vinegar of Modena PGI is classified: matured (“Maturato”, bearing the designation “Colonna”, or column, given the shape of the bottle) and aged (“Invecchiato”, where we can distinguish between two aging periods: a shorter one in the “Duca” bottle, and a longer one in the rounded “Farmacia” bottle).
